Valentine’s Microwave Dinner For Two

 

Valentine’s Day is infamous for red hearts, cards, balloons, and over priced pre-fixed menus. It can seem more intimate cook a nice meal at home and skip out on all the crowded restaurants, but as we all know, cooking at home often is accompanied by the stress of long prep and cook times when all you really want is to enjoy your meal with someone you love. That’s why we decided to come up with a delicious three-course meal that you can whip up right at home, all while using a microwave drawer (like Sharp’s gorgeous 24″ Black Stainless Steel Microwave Drawer (SMD2470AH)).

To start out the Valentine’s Day meal, we settled on a yummy spinach dip that’s not too heavy, perfect for sharing. (oh… and did we mention that it’s super simple to make in a microwave). All it requires is a little garlic, chopped spinach, cream cheese, sour cream, parmesan, milk, mozzarella cheese and cornstarch. Mix all ingredients in a microwave safe bowl and pop it in the microwave for about five minutes or until the cheese starts to bubble. Serve with your favorite dipping chip!

For the main course, we love this quick and easy tip we learned for cooking fish in the microwave. Simply place a filet of fish (whatever kind you prefer) alongside some chopped veggies in parchment paper. Season with salt, pepper, and a little bit of vinegar. Wrap it all up so that everything is sealed in the parchment paper and place on a microwave safe plate. Cook for about two and a half minutes and then leave in microwave while it cools. Unwrap from the parchment paper and enjoy!

Moving onto everyone’s favorite part of the meal dessert. To us, Valentine’s Day demands chocolate, and for this holiday why not cook up some delicious mini molten chocolate lava cakes? These are individually sized so you can whip up one for everyone or you can choose to share! Combine flour, cocoa powder, sugar, salt, baking powder, baking soda, oil or melted butter, milk and chocolate chunks. Combine all ingredients, leaving chocolate chunks for last, in a microwave safe dish and cook for about one minute. Serve hot and with a scoop of vanilla ice cream.
