After months of the winter cold, the summer sun is finally here and out to play! I don’t know about you, but I am constantly searching for ways to soak up every ounce of the sun while I can. You can find me sitting outside at all hours: morning, afternoon, night – you bet I am out there!

Long hours in the hot sun always call for a refreshing, cold popsicle. Did you forget to pick up some ice pops on your last trip to the grocery store or are you fighting the temptation of flagging down the ice cream truck down the street? Save yourself a trip to the store and the hassle of chasing down the ice cream truck by indulging in a homemade popsicle! With just a quick trip to the kitchen, you’ll have a sweet treat in no time. Make your own popsicle molds with paper cups and popsicle sticks!

After searching and trying different homemade popsicle recipes, I’ve created a roundup of my favorite summertime treats. Kick your feet up and unwind with one of these apple-solutely pear-fect fruit popsicles!

Strawberry and Cream Popsicle

I am constantly looking for new activities to enjoy, so I scroll through the internet constantly for inspiration. I came across this recipe from Living on a Dime and instantly knew that I would have to try each popsicle recipe throughout the warm months. The first one I made was the Strawberry and Cream popsicle. I am an avid strawberry lover and have shared a few of my favorite ways to use them, like in a Fresh Strawberry Pie or a simmer pot! Now, I am adding another to the list with this easy and delicious recipe!

 

Ingredients:

  • 1 cup strawberries
  • 1/2 cup vanilla ice cream or yogurt
  • 1 cup milk
  • 1 tablespoon sugar

Directions:

  1. Add all the ingredients to a blender. Blend together until smooth.
  2. Pour the mixture into popsicle molds and place the molds in the freezer.
  3. Once frozen through, remove from the freezer and enjoy (I wasn’t lying when I said it was berry easy!).

 

Blueberry Yogurt Popsicle

My family has been going blueberry picking for as long as I can remember. In addition to the fun memory of picking berries as a family, we leave with a ton of fresh blueberries – I’m talking enough blueberries to last us a lifetime. As much as we love to eat them as is, we also love to try fun new recipes, like Ricotta Blueberry Cheesecake and homemade popsicles, to make sure we are getting the most out of our hard work. These blueberry yogurt popsicles from The Foodie Physician are the berry best way to stretch those blueberries and cool off.

Ingredients:

  • 1 ½ cups blueberries (fresh or frozen)
  • 1 ½ tablespoon honey
  • 2 ½ cups vanilla yogurt, whole milk or reduced-fat
  • 4-6 tablespoons of milk

Instructions:

  1. Over medium heat, add the blueberries and honey together in a saucepan. Using the Simmer Enhancer on the Sharp Induction Cooktop, simmer until the blueberries start to burst and release their juices. This should take a few minutes. Use a fork to mash the berries, leaving some whole. Remove the saucepan from the cooktop and allow the mixture to cool.
  2. In a bowl, whisk together the yogurt and milk (the milk should be just enough to thin out the yogurt to create a pourable consistency).
  3. Once the blueberry mixture has cooled, fold it into the yogurt.
  4. Pour the mixture into popsicle molds. Freeze for a few hours or overnight, until solid.

 

Pineapple Popsicle

If you’re looking for a way to turn that crown upside down, these pineapple popsicles from One Lovely Life are sure to do the trick! Pineapples are known to be a sweet, tropical fruit, making them the perfect ingredient for a summertime popsicle. Not only do these popsicles taste like an absolute dream, but they are also made using only 3 ingredients in 3 hours! I can’t help but eat a few of these popsicles in one sitting (trust me, you’ll have to resist the urge to eat them all after just one lick too)! I have been doubling this recipe so my family can enjoy them too!

Ingredients:

  • 4 1/2 cups diced pineapple (fresh or thawed frozen)
  • 1/2 cup full-fat canned coconut milk
  • 12 tablespoons pure maple syrup or honey (optional)

Instructions:

  1. Place all of the ingredients into a blender.
  2. Blend until the mixture is completely smooth. Add more coconut milk if necessary to remove any additional lumps.
  3. Taste test the mixture and add syrup or honey until you reach your desired taste. Blend the mixture to combine the additional ingredients. Taste and add additional syrup or honey as needed, blending again to combine.
  4. Pour the mixture into a popsicle mold and freeze until firm (around 3-4 hours).
