New Year’s Resolutions for a Simply Better Life

On New Year’s Day each and every year, we are all guilty of making lists with somewhat extravagant life changes we strive to make in the New Year. We want to be fit and more confident, we want to travel to new places, and we want to spend more time with friends and family.

It never occurs to us in that euphoric moment of list making that the reason we don’t visit our Uncle John that often is, in part, because he isn’t exactly the life of the party, and that traveling to new and exciting places every weekend isn’t exactly probable with an insignificant rainy day fund.

At Sharp, we encourage you to take this year by storm, create obtainable goals, and make small changes to your daily routine to simply live better than you did the year before.

Take Little Steps

A step, no matter how small, moves you in the right direction. Start off your new year by taking the stairs instead of elevators and escalators, this way you can get in your daily exercise without a pricey gym membership. If you’re like me and work on the first floor of the office, walk or ride your bike more often on the weekend instead of driving to the local market.

Make a small difference in your work day by getting up from your desk once in a while to stretch and rest your eyes. We recommend doing this at least once every hour, even if it is just for a few minutes.

Lastly, do more of what you enjoy doing; take that kick boxing or yoga class with a friend, walk your dog more often, and as long as you’re moving you are headed in the right direction.

A key aspect of living an improved life style is breathing better. More often than not, we make drastic changes in our daily routine to improve our body, but we fail to remember that it all starts with the air we breathe.

Sausage and Pepper Lettuce Wraps Recipe

Make-ahead lunches during a busy work week are essential when you are trying to kick start a mindful diet (the temptations of the work cafeteria are sometimes just too much for any of us). Which is why this recipe for sausage and pepper lettuce wraps by our Sharp Chef, Sunkissed Kitchen, is  a must try for anyone who is gluten-free, trying a whole 30 diet, or just tempted to eat a tasty but mindful lunch.

Ingredients

  • 4 chicken sausage (compliant)
  • 2 bell peppers (sliced thin)
  • 1 onion (sliced thin)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon chili powder
  • 8 romaine lettuce leaves

 

Instructions

  1. Add sliced onions and peppers to a bowl, and coat with olive oil, sea salt, and spices.
  2. Add sausage and seasoned onions and peppers to the broiling pan.
  3. Bake at 425 degrees F for 15 minutes. If using a conventional oven, increase baking time to 20-22 minutes.
  4. Add lettuce leaves to plates or meal prep containers.
  5. Once the sausage, onions and peppers are baked, add a sausage and 1/4 of the pepper mixture to each wrap. Use a compliant mustard or other sauce to top.

Serves: 4     Prep Time: 5 Minutes     Cook Time: 15 Minutes

Vegetarian Enchilada Casserole Recipe

Another great goal you could incorporate into your monthly routine is to participate in “Meatless Monday” by replacing a meat meal once a week (even if it isn’t on a Monday). Worry not, we have vegetarian recipes that are perfect for any day of the week.

Ingredients

  • 4 cups enchilada sauce (1/2 recipe of my homemade enchilada sauce)
  • 12-15 corn tortillas
  • 1 tbsp olive oil
  • 2 onions medium, minced
  • 1/2 tsp sea salt
  • 2 bell peppers, chopped (I used 1 green, 1 yellow)
  • 2 ears corn (sub 2 cups frozen corn)
  • 1 can black beans 15 ounce
  • 3 cups cheddar cheese shredded
  • cilantro (optional, to garnish)

 

Instructions

  1. In a bowl, add chopped onions and peppers. Drizzle with olive oil and season with sea salt.
  2. Add peppers and onions to the broiling tray, and bake at 425 degrees F for 15 minutes.
  3. When the veggies are roasted, put them back in the bowl, and add the black beans and corn. Mix to combine.
  4. In an 11×11 pan, add 1/4 cup enchilada sauce to the bottom, and then add the first layer of tortillas. If you do not have a pan this size, you can split this recipe into 2 8×8 pans.
  5. On top of the tortillas, add a layer of the black bean and veggie mixture. Top with cheese.
  6. Repeat until there are 4 layers of tortillas, and 3 layers of veggies, black beans and cheese.
  7. On top of the final layer of tortillas, add 1/4 cup sauce and the rest of the cheese.
  8. Bake uncovered at 425 for 25 minutes.

Prep Time 30 minutes     Cook Time 45 minutes     Total Time 1 hour 15 minutes     Servings 12 servings

Blueberry Banana Baked Oatmeal Recipe

When all other attempts at eating better fail, at least remember the most important meal of the day and give yourself an extra 15 minutes in the morning to prepare and eat a good breakfast, like organic cage-free eggs,  a green smoothie, or our make ahead blueberry banana baked oatmeal.

Ingredients

  • 2 1/2 cups blueberries reserve 1/2 cup for topping
  • 2 1/2 cups oatmeal *certified gluten free, if necessary
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 bananas ripe
  • 1 3/4 cup almond milk unsweetened, or milk of choice
  • 2 eggs
  • 3 tablespoons coconut oil
  • 1/2 cup pecans
  • 2 tablespoons pumpkin seeds optional

Instructions

  1. Add 2 cups of blueberries to the bottom of a 11×11 square baking dish (or a 9×13).
  2. In a small bowl, mix together oatmeal, baking powder, sea salt, and cinnamon. Mix well, and then sprinkle over blueberries in baking dish.
  3. Using the same bowl, mash bananas. The riper your bananas are, the sweeter your oatmeal will be. If your family prefers sweetened oatmeal, you can add 2-3 tablespoons of the sweetener of choice in with the banana.
  4. Add eggs, almond milk, and coconut oil to the bananas, and stir together. Pour over the oatmeal mixture in the baking dish.
  5. Top with reserved 1/2 cup blueberries, and sprinkle with pecans and pumpkin seeds, or other desired nut or seed.
  6. Bake for 40-45 minutes.
  7. Serve hot, and drizzle with honey or maple syrup, if desired.

    Recipe Note** Baked oatmeal can be stored in the refrigerator for up to 4 days, or frozen in an airtight container for up to a couple of months. Reheat individual portions as needed.
