I always find myself making plans to spend my Sundays catching up with friends and family while enjoying a delicious brunch. With the holiday season around the corner, I am slimming down on the non-essentials for a month or two. Instead of going out EVERY weekend for brunch, I invite everyone over for a Sunday meal. Poached Egg
Whether it’s in a brunch classic dish like an eggs benedict or just simply placed upon avocado toast, poached eggs are a must-have. The process of poaching can be challenging to master, and even more complicated before your first cup of coffee in the morning. That’s why I love to use my Microwave Drawer to cook my eggs perfectly every time. Poaching an egg with your microwave is simple, just add water and white vinegar to a six-ounce custard cup and creak the egg into the cup, piercing the yolk with a toothpick. Then loosely cover the custard cup with microwave-safe plastic wrap and cook in the microwave for about one minute, or until your desired done-ness. I prefer my yokes a bit more runny, so 1 minute is just right for me. Once your egg is poached to your liking, remove the egg from the custard cup with a spoon and place it on top of some avocado toast or breakfast sausage.
Pancake in a Mug
When I go out for brunch, I expect variety. I rarely want to choose just one breakfast dish (because what is the fun in that?), so I pull together a few mini-dishes so I can sample a little bit of everything. Mug pancakes are perfect sample size and satisfy even the most intense pancake craving. Simply combine ¼ cup of pancake mix with some milk in a microwave-safe mug or ramekin and cook for about one minute. Make sure to serve with some fresh maple syrup drizzled on top.
Lemon Curd
This decadent lemon spread is perfectly paired with a variety of our favorite breakfast treats. My favorite? Spread on top some vanilla pound cake for a deliciously sweet brunch treat. Make this spread quickly in the microwave by combining melted butter, lemon zest, and lemon juice. Whisk in some eggs and heat in the microwave for 3-4 minutes, stirring every minute. Let cool in the refrigerator until the spread is thick. Serve on top toast, pound cake, or with some Greek yogurt.
