How to Enjoy A Microwave Brunch At Home

Warmer weather has finally arrived and we find ourselves wanting to spend our Sundays catching up with friends and family while enjoying a delicious brunch. Instead of going out every weekend for brunch, we suggest making a big breakfast for your loved ones at home using the Microwave Drawer TM! Using microwave-friendly recipes cuts down on prep and cook time and leaves us with a delicious brunch that everyone can enjoy. Below we’ve put together some of our favorite microwave friendly breakfast recipes that are perfect for any brunch adventure.

Poached Egg

Ixo4VIxUTvConPhq4Ei9_MPE 3 - final_1Whether it’s in a brunch classic like an eggs benedict or just simply placed upon avocado toast, poached eggs are a must have for any good brunch. The process of poaching can be difficult to master, that’s why we love to use our microwaves and get the eggs cooked perfectly every time. Simply add water and whi te vinegar to a six-ounce custard cup and creak the egg into the cup, piercing the yolk with a toothpick. Cover loosely with plastic wrap and cook in the microwave for about one minute. Remove the egg with a spoon and place on top of some avocado toast for a brunch classic ready in just minutes.

Pancake in a Mug

For those days where we don’t want to choose just one thing, we love to pull together a few mini meals so we can sample a little bit of everything. These mug pancakes are a perfect sample size and satisfy even the most intense pancake craving. Combine ¼ cup of pancake mix with some milk in a microwave safe mug or ramekin. Cook for about one minute and serve with some fresh maple syrup drizzled on top.

Lemon Curd

Spread on top some vanilla pound cake for a deliciously sweet brunch treat. Make this spread easily in the microwave by combining melted butter, lemon zest and lemon juice. Whisk in some eggs and heat in the microwave for 3-4 minutes, stirring every minute. Let cool in the refrigerator until the spread is thick. Serve on top toast, pound cake or with some Greek yogurt.
