Beyond the Reheat Breakfast

Workdays can be so busy that I rarely have time to wait in line at my favorite grocery store to stock up on fresh fruits and veggies for the week ahead. And these Spring months in quarantine months can place even more limits on the bounty of “fresh”.

If you are having a tough time buying groceries each week due to low inventory at your local store, have no fear, frozen fruits and vegetables can be tasty, packed with nutrients, and heated in just seconds in a Sharp microwave oven.

Omelet in a Mug

Ok admit it, we’ve all had a day during this quarantine where the alarm doesn’t go off for whatever reason, and suddenly there isn’t enough time to shower and get ready, let alone eat a full and balanced breakfast. Even without the morning commute, I struggle sometimes to stay on time with my work from home schedule. Thankfully, I discovered this microwave oven mug recipe that combines protein-packed eggs with frozen veggies to receive that extra kick I need in the morning so I can go out and seize the day (from a safe 6ft distance). If you are a fan of those make-ahead microwave oven breakfast sandwiches from the freezer aisle, this recipe is for you.

Simply whisk two eggs in a microwave-safe mug and throw in some of your favorite frozen vegetables (I love peppers, onions, and kale in my morning omelets). Stir in some shredded cheese and microwave for about two minutes or until your desired doneness. Added bonus: this recipe is portable, so it can be eaten on the go or at your home desk!

Blueberry Microwave Mug Cake

Blueberries are some of my favorite fruits but they are only in season for a short time. I love to take advantage of the picking season and get a few extra pounds to put in the freezer and snack on over the course of the year. One of my favorite frozen berry recipes is a blueberry microwave mug cake for those nights when I am really craving a sweet treat but I don’t want to commit to the gallon of ice cream.

Start off by combining melted butter, sugar, milk and vanilla extract in a microwave-safe mug and stir in baking powder and flour. Top with a handful of frozen blueberries and microwave for about 45 seconds or until the berries are fully cooked.

Raspberry Syrup Drizzle

If you are new to Simply Better Living, you may not have read about my obsession with breakfast foods. It is true I am a breakfast connoisseur. One of my favorite add-ons to spice up my everyday foods (mainly pancakes and muffins) is a fresh raspberry syrup made simply with frozen berries. It pairs perfectly with some Greek yogurt in the mornings or on top of vanilla ice cream for dessert as well.

Take about one cup of seedless frozen raspberries and place in a microwave-safe bowl. Stir in some sugar and cook until berries release their juices. Then pop in a blender to make the syrup smooth. Serve with some pancakes, yogurt, ice cream or just eat right out of the bowl. Yum!
