This week we’re all about starting on the right foot with some easy meatless Monday meal prep. Meatless Monday is a great way to reduce meat consumption as well as change up your weekly dinner menu. That’s why we compiled some delicious recipes from The Kitchn that can be cooked fresh to perfection using our SuperSteam+ Built-in Wall Oven or made quick and easy using one of our Microwave Drawer Ovens. With recipes this tasty, we’re sure that the meat won’t be missed this Monday.
Baked Potato Shakshuka
I am loving this recipe for so many reasons, including the fact that it combines eggs, one of my favorite meatless protein sources, with mindful sweet potatoes. It is also super simple to make!
Cut the potatoes lengthwise and use a fork to fluff the inside of each, then divide marina sauce between the two halves. Create a well in the center of the marinara sauce and gently crack an egg into each center. Drizzle with olive oil and cook in the microwave until egg whites are set. Top with some salt and parsley – enjoy this recipe for meatless Monday breakfast, lunch, or dinner!
Sautéed Zucchini Squash with Thyme and Feta
This recipe is perfect for a quick and easy side dish and can be steamed to perfection using our SuperSteam+ Built-In Wall Oven. The Supersteam+ sautés veggies using superheated steam, leaving them tender and delicious while still packed with nutrients. Cut up some zucchini and summer squash along with half a medium diced red onion pop them in the Supersteam+, cooking until tender. Once done, drizzle with olive oil, salt, and black pepper and top with ¼ cup of crumbled feta. Serve in a big bowl for the main dish or as a side to accompany any meatless Monday entree.
Chickpea, Barley and Zucchini Ribbon Salad with Mint and Feta
This salad packs a serious nutritional punch and is super tasty, thanks to crunchy chickpeas and refreshing mint. Bonus tip: to cut down on prep time for this recipe, warm the chickpeas in the microwave to better absorb the salad dressing. Cut the zucchini lengthwise in long strips and sprinkle with some salt, and then set aside. Bring water to a boil and add barley; let cook for about fifteen minutes. Combine barley with warm chickpeas and zucchini strips and top with a dressing of olive oil, vinegar, and lemon juice. Crumble feta on top and add mint and serve warm. Yum!
