This breakfast dish is even more delicious than it looks (we don’t know how it’s possible, either!). Make them in a 6 or 12 cavity muffin pan depending on how many you need. We love these sprinkled with fresh herbs, like parsley, basil, and chives.

Ingredients
- 1/2 batch puff pastry
- 1/2 batch puff pastry
- 6 eggs
- 6 eggs
- sea salt to taste
- sea salt to taste
- black pepper to taste
- black pepper to taste
Instructions
- Cut puff pastry into pieces that are about 1 inch cubed.
- Preheat the Superheated Steam Oven on the Steam/Bake Bread setting at 425ºF for 14 minutes.
- Roll out the pastry into an 8-inch circle, and press into a 6 cavity muffin pan. Repeat until all 6 cavities are lined with pastry. Press them down into the edges of each, and then use a fork to poke holes across the bottoms.
- Add an egg to the center of each piece of pastry, and then season them with salt and pepper to taste.
- Bake the eggs, which take 14 minutes to cook to medium done.
Notes
The puff pastry will shrink around the eggs as they bake.
Have fun with these! Try lining the pastry with cheese or slices of a ham before adding the eggs, or sprinkling the baked eggs which fresh chopped herbs, like Italian parsley, basil, and chives.
