Mug Meal’s cookbook author, Dina Cheney, created these delicious warm Greek Salads that can easily be prepared in our Microwave Drawer and are perfect for a quick and healthy lunch.

For a variation of this warm vegetarian salad, stir in some finely chopped fresh parsley and seeded, diced tomato.

¾ cup cooked brown rice (short or long grain)

¼ cup finely chopped orange bell peppers (about ½ pepper)

¼ cup 1/3-inch raw broccoli florets

3 Tbs. crumbled feta

¼ tsp. lemon zest

⅛ tsp. kosher salt

  1. Stir together all of the ingredients in a small to medium bowl, then pour into a 16-oz. mug.
  2. Cover and microwave until the broccoli is tender, about 4 minutes.
