Happy Wednesday! I know that sometimes at this point in the week we all NEED a little pick me up. My favorite tasty way to boost energy is by creating a mindful matcha recipe of course! I love matcha for so many reasons, its taste, its color, its health benefits. Not to mention the fact that it can be added to just about all of my favorite foods for a nutritional boost.

This recipe is super simple, not to mention perfect for all those stressful mornings when getting a delicious and nutritious breakfast doesn’t seem possible. Simply add some matcha powder to your favorite kind of yogurt.

Mix in some honey or maple syrup for sweetness and top with peeled blood orange and walnuts. Voilà; a delicious breakfast that is pretty enough to star in your next Instagram! In need of a little indulgence this hump day? Fret not, I’ve got you covered! These matcha truffles are tasty and pack the added nutritional punch of matcha powder-perfect for guilt-free snacking! Mix 1 cup of heavy cream and 3 tbsp of butter over low heat and stir in 1/2 cup of matcha powder. Chop 1 cup of white chocolate chips and melt in the microwave oven, stirring occasionally.

Combine with the matcha and cream mixture and pour it into a silicone ice cube tray to set. Refrigerate for about 4-5 hours then top with some more matcha powder and freeze-dried strawberries!

We’d like to argue that pancakes should be able to be enjoyed no matter what time of day it may be. These matcha pancakes are perfect, day or night, whenever a pancake craving hits. Whisk together egg, milk, vegetable oil, sugar and vanilla extract. Then add in flour, matcha powder, baking powder, and salt. Ladle the batter onto a hot griddle and flip once bubbles start to form. Top with some syrup and enjoy!
