Ingredients
- 1 1/4 cup warm water
- 1 tablespoon brown sugar
- 2 1/4 teaspoons yeast
- 3 1/4 cups all purpose flour
- 1 teaspoon sea salt
- 1 egg white
For Boiling
- 10 cups water
- 1/4 cup honey
Cinnamon Raisin
- 1 tablespoon granulated sugar
- 1 teaspoon cinnamon
- 1/2 cup raisins golden or black
Jalapeno Cheddar
- 1 jalapeno very thinly sliced
- 3/4 cup cheddar cheese divided
Everything Bagels
- 3 tablespoons everything bagel seasoning
Instructions
- Add the warm water, brown sugar, and yeast to the bowl of a stand mixer. Whisk together, and then let sit for 5 minutes, allowing the years to proof.
2. To the mixer bowl, add the flour and salt. With the dough hook, mix the flour into the yeast mixture on a low setting. Once the flour and water have combined into a dough, increase the speed and knead the dough for 3-5 minutes. If the dough seems too dry, add 1/2 tablespoon of water to help it come together. If it seems too wet, add 1 tablespoon of flour.
3. Grease a medium sized mixing bowl with olive oil. Add the dough, and cover with a thin towel.
4. Turn the Sharp Smart Combi Built-in Steam Oven to Steam Proof. Place the bowl with the dough in the oven, and set it for 20 minutes.
5. Flip the bagel dough out onto a cutting board, and cut the dough into 6 equal sized pieces.
6. Line a baking tray with parchment paper.
7. Shape each section of dough into a disc, and then press a hole into the center, stretching it out to about 2 inches. Add each piece of shaped dough to the baking tray.
8. Boil the water and honey. Add 2-3 bagels into the boiling water, pressing down so the tops and bottoms both cook, for about 2 minutes. Use a slotted spoon to remove the bagels from the boiling water, placing it back on the parchment-lined baking tray.
9. Brush each bagel with egg white.
10. Set the Sharp Superheated Steam Oven to Steam Bake on the Bread Setting at 425º F for 20 minutes. Once the oven has preheated, add the baking tray and bake the bagels.
Jalapeno Cheddar
- After kneading the dough in the mixer, add the thinly sliced jalapeños and 1/2 cup of cheddar cheese. Turn the stand mixer back on, so the jalapeños and cheese are mixed into the dough evenly. If necessary, knead them further into the dough before adding the dough to the mixing bowl to proof.
- After shaping the bagels, sprinkle the tops of each one with additional cheddar cheese.
Everything Bagels
After brushing the bagels with egg white, sprinkle heavily with Everything Bagel seasoning.
Cinnamon Raisin
After kneading the dough in the mixer, add the sugar, cinnamon, and raisins, and turn the mixer back on to evenly mix into the dough. Knead the dough by hand if needed to evenly mix the raisins into the dough.
